Spur’s newest eatery holds soft opening during Homecoming week

“Mix'd Cafe will be opening tomorrow,” read the post on sister enterprise Spur Hardware’s Facebook page. “This will be our first soft opening day of Homecoming weekend and we are so excited to share our little Cafe with the town.”

Plenty of diners took advantage of the last-minute announcement to grab a bite to go at lunchtime before the October 3 pep rally. The brightly colored space featured a variety of eats and drinks from various cultures—from espresso to salmon rolls to Stroopwafel cookies.

One wall featured an enormous antique street plan of Paris; outside, a bistro table and umbrella also conjured up a European flair.

On the parent company website, the concept is explained: “In Vietnamese cuisine, bánh mì or banh mi is a short baguette with thin, crisp crust and soft, airy texture. It is often split lengthwise and filled with savory ingredients like a submarine sandwich and served as a meal, called bánh mì thit. Plain banh mi is also eaten as a staple food.

“The name Mix'd Cafe represents a... ‘Mixture’ of the best foods from many countries and cultures to provide a vast culinary experience in a small town neighborly setting.”

We’ll wait to see what more is in store.
